PUEBLO, CO – March 18, 2026: Beginning April 1, Bay’s Meat Market will introduce Pueblo County–raised beef at its southside Pueblo shop through trusted Colorado supplier Cortese Cattle Company. The addition includes dry-aged selections known for their rich flavor and tenderness.

The market will continue offering its lineup of all-natural, Colorado-raised beef while expanding its selection of locally sourced products. Sourcing beef raised in Pueblo County helps keep more agricultural dollars circulating within the region while giving customers greater transparency about where their food comes from.

“We’ve always believed the best beef comes from right here in Colorado,” said Ernie Meyer, Pueblo County resident and owner of Bay’s Meat Market. “Bringing Pueblo County–raised beef to our customers supports local ranching families while offering high-quality Colorado beef at the counter.”

Pueblo County has a long proud history tied to ranching and livestock production dating back to the early days of Colorado’s settlement. Historic ranches such as the Goodnight Ranch helped establish the region as one of the state’s early cattle centers in the late 1800s, and agriculture remains an important part of Pueblo County’s economy today. According to the most recent U.S. Department of Agriculture Census of Agriculture, the county is home to more than 700 farms and ranches covering over 833,000 acres, with agriculture generating more than $52 million in market value annually. Livestock production accounts for nearly half of all agricultural sales, underscoring the continued importance of cattle ranching to the region’s economy and heritage.

Future Growth Opportunity for Bay’s Meat Market in Southern Colorado
Bay’s Meat Market is also exploring opportunities to expand operations to include local meat processing, an investment that could strengthen Southern Colorado’s agricultural infrastructure while creating new jobs tied to local ranching.

Since 2020, Bay’s Meat Market has submitted several proposals to bring a processing facility to the City of Pueblo. Despite support from residents and ranchers, progress remains uncertain as economic development projects and responses from the city have stalled. Bay’s is currently evaluating opportunities in nearby counties where leaders have shown strong interest in supporting regional processing capacity. Expanding local processing would allow more livestock raised in Southern Colorado to be processed closer to home, reducing transit time for ranchers and keeping more of the economic value within the region.

The announcement comes as residents have expressed strong support for economic development that strengthens primary industries, agriculture, and small business growth across the region while easing some of the pressure from rising meat costs.

“We believe strongly in Pueblo and the ranching families who make this region what it is,” Meyer said. “We would like to see this investment happen right here in Pueblo, but we are also looking at opportunities across Southern Colorado to move the project forward.”
